Instructions:

  • 1. Marinate the rabbit with garlic, rosemary, thyme, and bay leaves for at least 2 hours
  • 2. In a large pan, sauté garlic in olive oil until golden, then brown the rabbit pieces on all sides
  • 3. Add white wine and let it evaporate
  • 4. Stir in the cherry tomatoes, season with salt and pepper, and cook on low heat for about 1 hour, allowing the sauce to thicken and the flavours to meld.

  • – 500g bucatini pasta
  • – 500g peeled tomatoes
  • – garlic, onions, and rosemary
  • – olive oil, salt, and pepper
  • – grated Pecorino cheese

Instructions:

  • 1. sauté garlic and onions in olive oil. Add rosemary and the rabbit, browning the meat.
  • 2. add peeled tomatoes and simmer for about 1 hour, allowing the rabbit to tenderize and infuse the sauce.
  • 3. Cook bucatini pasta al dente. Drain and toss with the rabbit sauce.
  • 4. Serve with grated Pecorino for an extra touch of flavour.
